🌱 Plant-based-ish in the South... 😅

Y’all, I’m transitioning to a plant-based diet — but when I visited my cousin in Georgia, she whipped up some cornbread, collard greens, and these magical things called October beans (never heard of them before, but whew, they were GOOD). 💥

At that moment, I told myself: no stress, no pressure — if I find plant-based options, great. If not? I’m just gonna enjoy the meal and the moment. Because listen… she put both feet in those beans! 👣✨

Now I can’t stop thinking about ‘em. Went to the store and found some pink beans (close enough? 😂), so today I’m cooking collards, cornbread, and serving it up with some brown rice I had on deck. A soulful, feel-good comfort meal that hits like home. 🫶🏾🍛
